In this video Brad shows us what his take on a BBQ half chicken is all about! Whether you’re looking to spice up your regular weeknight staple or get some tips for a Texas competition style bird, then this video is for you!


INGREDIENTS

INSTRUCTIONS

    1. Debone your chicken
      • Score down the middle of your chicken and loosen the skin and peel it back on each side so that you can easily access and remove the spine.
      • With a sharp knife, cut down either side of the spine to create a path for your sharp, boning shears to cut. With your scissors cut on your premade paths and remove the spine.
      • Once the spine is removed, turn the bird towards you and score the breast bone and split it in two thereby creating your two half chicken pieces.
      • Trim off anything that is unappealing and remove or leave the wing on depending your preference.
    2. Brine
      • Transfer your chicken into your favorite brine for 6-8 hours
    3. Position and Season
      • Use toothpicks to pin your chicken so that it’ll stay exactly the way you want it while it cooks. Be sure you count your toothpicks as they go in so you know how many to take out!
      • Use our Smoke ’n Magic Chicken Rub liberally on the outside and let it set in for between 20-30 minutes.
    4. Cook
      • On wire racks smoke at 300° for 45 minutes
      • Remove your chicken while on the wire racks and place into aluminum pans with salted butter sticks, halved, in the bottom. Tent the pans, then place back on the smoker for another 35-40 minutes.
      • Once your chicken has finished smoking add your favorite Smoke ’n Magic BBQ sauce right over the top. Once it’s back in the kitchen, go back in with a second coating to really give it that gloss and shine!
