INGREDIENTS
- Fresh poblano peppers
- 8 oz cream cheese, softened (leave out for 2–3 hours at room temp)
- 1 cup real crab meat
- 1 tbsp parsley, chopped
- 1 tsp garlic powder (season to taste)
- 1 cup shredded Mexican cheese blend
- Certified Angus Beef ribeyes, sliced at 1/4″ thick
- Smoke’n Magic Rib Rub
- Toothpicks
INSTRUCTIONS
- Prepare the Peppers:
- Slice poblanos in half and remove the seeds.
- Make the Filling:
- Soften cream cheese for 2–3 hours at room temperature.
- In a bowl, mix cream cheese, crab meat, parsley, and garlic powder until well combined.
- Transfer the mixture into a piping bag (or a resealable bag with the tip cut off).
- Stuff the Peppers:
- Pipe the crab mixture onto the halved poblanos.
- Dip the stuffed peppers into the shredded Mexican cheese to coat the filling.
- Cook the Peppers:
- Place the stuffed poblanos on the grill (or in a smoker) and cook at 300°F for 20–25 minutes. (We used the Hooray Hurtado Smokebox for that extra smoky flavor.)
- Prepare the Ribeye Wrap:
- Season both sides of the ribeye slices with Smoke’n Magic Rib Rub.
- After the poblanos are done cooking, flatten the ribeye slices and wrap them around the stuffed peppers.

- Final Grill:
- Return the wrapped peppers to the grill and cook until the ribeye reaches your desired level of doneness.
