This Smoked Peach Cobbler is one of our easiest (and most crowd-pleasing) desserts. Warm, gooey peaches under a crisp golden topping, made even better with a scoop of fresh homemade vanilla ice cream!

Ingredients

For the Cobbler:

  • Two 29oz cans of Sliced Peaches in Heavy Syrup
  • Ground Cinnamon (to taste)
  • 1 box Yellow Cake Mix
  • 2 sticks of Butter, melted

For the Ice Cream:

  • 2 cups Heavy Whipping Cream
  • 2 cups Half & Half
  • 1 can (14oz) Sweetened Condensed Milk
  • 2 tbsp Vanilla extract

Instructions

  1. Make the Cobbler
    • Drain the canned peaches, reserving the juice for later use
    • Pour the peaches into a medium aluminum baking pan
    • Cut them into smaller chunks if desired
    • Add 1/2 cup of the reserved syrup over the top
    • Sprinkle with cinnamon over the top to taste
    • Evenly spread the yellow cake mix across the whole pan
    • Pour the 2 sticks of melted butter evenly across the top
    • Bake at 350°F in your smoker or oven for 50-55 minutes, until the top is golden brown and bubbly.
  1. Make the Ice Cream
    • While we’re waiting for the cobbler to bake, it’s the perfect time to make some homemade ice cream to go with it!
    • In a mixing bowl, combine:
      • 2 cups heavy cream
      • 2 cups half & half
      • 1 can (14oz) sweetened condensed milk
      • 2 tbsp vanilla extract
    • Mix well until fully combined
    • Pour into your ice cream maker (we used a Cuisinart machine from Amazon)
    • Churn for 20-30 minutes, until it reaches your desired consistency.
  1. Cool and Serve
    • Remove the cobbler from the smoker and cool for 15-20 minutes
    • Scoop and serve warm with a big spoonful of your fresh vanilla ice cream on top.
    • Enjoy with the whole family!
