how to trim and cook a Texas brisket

You can take the girl out of Texas, but you can’t take the Texas out of her brisket! 🐂🔥 In this recipe video, Bre walks you through trimming and cooking the perfect Texas-style brisket—her favorite method, no competition rules required. Whether you’re a brisket newbie or a seasoned pitmaster, this one’s for you.

  1. Prepare the brisket
    • Find the point and the flat. The point is where you’ll get your burnt ends, while the flat is where your slices will come from.
    • With a sharp knife, trim any excess fat to make your brisket level. Remove any hard fat, and remember to avoid 90° angles! You can round off some fat and meat on the sides if necessary. Flip over and remove the thick fat layer off the back. 
  2. Season
    • Transfer your brisket into a large baking pan or cookie sheet and get ready to season.
    • Apply Rio Valley Blanco as a base layer and our Smoke’n Magic Rib Rub on both sides and allow to sit for at least an hour. Pat your seasoning in and wait for it to appear wet before moving forward. You can also let it sit overnight in the fridge to “sweat.”
    • If refrigerating overnight be sure to remove it from the fridge for at least an hour before placing it on your smoker.
  3. Time to Smoke!
    • Set inside your smoker between 300° and 350° for at least 2-3 hours.
  4. Wrap
    • Lay out and moisten butcher paper with butter, beef tallow, or duck fat.
    • Remove your brisket from the smoker and wrap it tightly from end to end.
    • Place your wrapped brisket back on the smoker for another 2.5 to 3 hours, or until your temperature probe has no resistance when being inserted and removed.
  5. Rest and Slice
    • We now rest our brisket for about 3 hours for optimal results
    • Slice against the grain from the ends on up!
