INGREDIENTS

  • Fresh poblano peppers
  • 8 oz cream cheese, softened (leave out for 2–3 hours at room temp)
  • 1 cup real crab meat
  • 1 tbsp parsley, chopped
  • 1 tsp garlic powder (season to taste)
  • 1 cup shredded Mexican cheese blend
  • Certified Angus Beef ribeyes, sliced at 1/4″ thick
  • Smoke’n Magic Rib Rub
  • Toothpicks

INSTRUCTIONS

  1. Prepare the Peppers:
    • Slice poblanos in half and remove the seeds.
  2. Make the Filling:
    • Soften cream cheese for 2–3 hours at room temperature.
    • In a bowl, mix cream cheese, crab meat, parsley, and garlic powder until well combined.
    • Transfer the mixture into a piping bag (or a resealable bag with the tip cut off).
  3. Stuff the Peppers:
    • Pipe the crab mixture onto the halved poblanos.
    • Dip the stuffed peppers into the shredded Mexican cheese to coat the filling.
  4. Cook the Peppers:
    • Place the stuffed poblanos on the grill (or in a smoker) and cook at 300°F for 20–25 minutes. (We used the Hooray Hurtado Smokebox for that extra smoky flavor.)
  5. Prepare the Ribeye Wrap:
    • Season both sides of the ribeye slices with Smoke’n Magic Rib Rub.
    • After the poblanos are done cooking, flatten the ribeye slices and wrap them around the stuffed peppers.
    • Secure with toothpicks to hold everything in place.
  6. Final Grill:
    • Return the wrapped peppers to the grill and cook until the ribeye reaches your desired level of doneness.
