This recipe helped us earn 2nd Place Cook’s Choice at the Jack Daniel’s World Invitational (2023) and it’s a completely different take on traditional candied yams or sweet potatoes.
These are rich, creamy, lightly sweet, and finished with a toasted marshmallow crème topping that brings it all together. Even better? Brad doesn’t like sweet potatoes… and absolutely loves this recipe. That should tell you everything you need to know!
Ingredients
- 3 sweet potatoes, peeled
- 1 stick salted butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- Salt to taste (about 1 tbsp)
- 2oz Bourbon (we use Holladay Distillery Soft Red Wheat)
- 7oz marshmallow creme
Instructions
- Cook the Sweet Potatoes
- Peel the sweet potatoes and boil them until fork-tender
- Drain well and transfer to a large mixing bowl
- Build the Flavor
- While the potatoes are still warm, add:
- 1 stick of salted butter
- ½ cup granulated sugar
- ½ cup light brown sugar
- ½ tsp cinnamon
- Salt to taste (approximately 1 tbsp)
- 2oz bourbon
- While the potatoes are still warm, add:
- Cream the Potatoes
- Using a hand mixer, cream the mixture until smooth and fluffy
- Pro tip: DO NOT add milk, half-and-half, or cream, it will only water down the recipe and the butter, sugar and bourbon provide all the richness this recipe needs.
- Transfer to a baking dish and spread the creamed sweet potato mixture evenly into a 9×9 baking pan, smoothing the top.
- Add and Toast the Marshmallow Creme
- Spoon approximately 7oz of marshmallow creme over the top. If needed, gently warm the creme so it pours and spreads more easily.
- Using a brulee torch (or in Brad’s case, a large handheld torch or “grill gun!”), carefully toast the marshmallow creme until golden and carmelized.
- You can also broil briefly in the oven to toast the top.
- ⚠️ Use caution whenever working with open flame! ⚠️
- Rest and Serve
- Let the sweet potatoes cool slightly before serving
- Scoop, serve and enjoy a bourbon-infused side dish that converts even the toughest sweet potato skeptics!
