
This recipe recently went viral on TikTok!
This is NOT your mama’s meatloaf! Until you’ve tried meatloaf wrapped in a literal basket of bacon, you haven’t tried meatloaf!
Ingredients
For the Sauce:
- 1 Package of Thick Cut Bacon (We love to use Daily’s!)
- Parchment Paper
- 3lbs of 80/20 Ground Beef
- 1 Cup Panko Bread Crumbs
- 2 Packages of Lipton Onion Soup Mix
- 2 Eggs
- 1 Red Bell Pepper
- 1 White Onion
- Smoke’n Magic Pork Rub
- Latex Kitchen Gloves
- Disposable Medium Sized Loaf Pan
- Non Stick Cooking Spray
- 1 Baking Rack
- 1 Regular Size Drip Pan
- Ketchup
- Smoke ’n Magic Rib Rub
Instructions
- Prepare your bacon basket weave
- Lay out a piece of parchment paper to make your basket weave on.
- Place your bacon block at the back (closest towards you) and start by peeling off one individual strip and lay it down horizontally.
- Then, grab your bacon pieces and after giving them a nice stretch, attach them perpendicularly to your first piece of bacon, but this time lay them all next to one another, vertically. This should be roughly 7-8 pieces of bacon when you’re through.
- Now that your basic basket shape is down, go ahead and peel back every other bacon piece you just laid down.
- You’ll now lay an additional piece down horizontally and alternate which pieces of bacon you pull back.
- Repeat this process until you’ve created your bacon basket!
- Build your meatloaf
- Place 3lbs of 80/20 (meat to fat ratio) of ground beef into a large bowl and add the following:
- 1 cup of Panko bread crumbs.
- 2 packages of Lipton onion soup mix
- 2 whole eggs
- 1 chopped red bell pepper
- 1 chopped white onion
- A healthy coating of our Smoke’n Magic Pork Rub
- While wearing gloves, go ahead and mix until cohesive. Pro tip: You don’t want to overdue this part and break down the texture of the meat.
- Next, spray your loaf pan with a non-stick cooking spray. We won’t be cooking in this, but rather, it will help refine our shape.
- Place meatloaf in the loaf pan then put in the fridge to set up for about 20 minutes.
- Place 3lbs of 80/20 (meat to fat ratio) of ground beef into a large bowl and add the following:
- Weave your meatloaf into your bacon
- Take your meatloaf out of the fridge, and turn the entire loaf pan upside down squarely in the middle of your basket weave!
- Lift the sides of your parchment paper so that your bacon covers the top and sides of your loaf. The goal isn’t to cover every square inch.
- Pull your loaf toward you, and place a baking rack on the side furthest from you. Then go ahead and flip your loaf onto the rack so that the full covered bottom is now the top of your loaf.
- You may need to rearrange some of your bacon, but this is entirely normal!
- Add an additional layer of Smoke’n Magic Pork Rub over the top of your meatloaf.
- Cook your meatloaf
- Cook on the wire baking rack (with a drip pan underneath to help catch any juices!) at 350° until the internal temp reaches 150°-155°
- Towards the end, brush your meatloaf with ketchup and add a layer of our Smoke ’n Magic Rib Rub over the top.
- Once you reach your desired internal temperature, let your meatloaf sit for 30-45 minutes before slicing, and serve!
