Springtime is upon us! One of our favorite meals on those dreary rainy Spring days is a Grilled Cheese Sandwich with Tomato Soup. Here’s our take for the best version you’ll ever have!

Ingredients

For the Bisque:

For the Grilled Cheese Sandwiches:

  • Bread of your choice (we love Texas toast)
  • Butter
  • Apple Smoked Cheddar Cheese (sliced)
  • Velveeta cheese slices
  • Everything Bagel Seasoning, Jalapeño flavored

Instructions

  1. Make the Bisque
    • In a large pot, add a 50/50 mixture of 2 cups of Smoke ‘n Magic Bloody Mary Mix and 2 cups of 2% milk
    • Bring to a simmer while you prepare the sandwiches
    • Then ladle into bowls once ready for serving.
  1. Build Your Sandwiches
    • In a cast iron skillet, melt butter and add your Texas toast. We’ll be double toasting so it’s nice and toasty on both ends!
    • Baste some melted butter over the top side of the bread, let it soak in
    • Sprinkle with Everything Bagel Seasoning
    • Once the bottoms are toasty, flip the bread
    • Add the Apple Smoked Cheddar Cheese and 1 slice of Velveeta to each piece of bread, cook until melted
    • If you want to speed this process up, you can add a lid to your pan
    • Once the cheese is melted, combine the bread slices to make your cheesy grilled cheese sandwich!

Top with cilantro, dip into your Bloody Mary Bisque, and enjoy!
