This week, we’re sharing our favorite way to make chicken wings at home, perfect for serving family and friends poolside. Stay tuned to the very end to watch Brad explain “The Umbrella Method” of eating chicken wings!
Ingredients
- Chicken Wings
- Sprayable Duck Fat or oil of your choice
- Smoke ‘n Magic Chicken Rub
- Vegetable oil for frying
- Your favorite wing sauce (ours is Sweet Baby Ray’s Buffalo Wing Sauce)
- 1 large baking sheet
- 2 wire baking racks
- 1 large mixing bowl
- Aluminum foil
Instructions
- Prepare and Smoke Your Chicken Wings
- We like to have our butcher prepare our chicken wings so that they’re ready to roll! But you can absolutely buy them fresh out of the pack and prepare them by trimming them down yourself. Then, over a tin foil lined baking sheet over wire baking racks separate out the flats and the drums.
- Lightly spray your wings with the oil of your choice (in this case we’re using duck fat) to help your rub stick better.
- Apply a nice, even coat of Smoke ‘n Magic Chicken Rub to your wings.
- Flip your wings, and repeat!
- Cook at 300° F for 45 minutes
- Fry Your Wings
- Take an internal temperature reading of your wings. Ours were sitting at about 173° F and after frying we want that number to be closer to 210°.
- Fry your wings in 375° vegetable oil for approximately 3-4 minutes.
- Dress Your Wings
- Take your favorite wing sauce. Ours is Sweet Baby Ray’s Buffalo Wing Sauce and pour about ¼ cup into a large mixing bowl over your wings. Then give them a generous toss.
- Pour them out over your cutting board and add a little bleu cheese over the top. Enjoy!
