Need to get rid of some leftovers cluttering up your fridge? We’ve got you covered with our recipe for Chicken Pot Pie!
Ingredients
- 3 pounds of rotisserie chicken (or your leftover meat of choice)
- 1 pound of vegetables (frozen, canned, fresh, or leftover… it’s up to you!)
- 1 can cream of chicken soup
- Smoke ‘n Magic Chicken Rub
- Pie pan
- Nonstick cooking spray or butter
- Pie crust (you can make your own if you wish, we opted for premade for simplicity)
Instructions
- Prep Your Pie
- Take a pie pan and coat with a nonstick cooking spray or butter to keep the pie from sticking
- Lay the bottom layer of premade pie crust so that it’s flat on the bottom, and going up the sides of the pan
- As you do this, preheat your oven or smoker to 350°F (we used the Gateway Drum Smoker, but an oven works just as well!)
- Make Your Pie Filling
- In a large bowl, mix your chosen leftover meat with vegetables, cream of chicken soup, and a healthy dose of Smoke ‘n Magic Chicken Rub for some extra flavor
- Mix well, then scoop into your pie pan and spread evenly, making sure you hit every crevice of the crust
- Add the Top Pie Crust
- Add your second layer of pie crust to the top, and fold it into the sides of the bottom piece.
- You can also try the basket weave method, as Brad suggested, or keep it simple!
- Take a knife and cut some slits into the top of the pie to allow steam to go through and keep the crust from bubbling.
- Bake
- Bake your pie at 350°F for 30-45 minutes, keeping an eye on it to make sure the sides don’t overcook
- Pro tip: If you notice the sides cooking faster than the middle, you can apply a layer of tin foil around the edge of your pie pan to allow the middle to finish cooking
- Cool, Serve and Enjoy!
- Once the crust reaches a perfect golden brown and the middle is cooked through, remove from the oven and allow to cool slightly before serving!
