This recipe is straight out of Bre’s childhood in Texas! Fried green tomatoes with smoked pimento cheese dip,, inspired by the way her grandmother used to make it. Crispy, golden tomatoes meet creamy, smoky, cheesy goodness for the ultimate comfort food combo.

Ingredients

For the Fried Green Tomatoes:

  • 3–4 green tomatoes, sliced
  • Ground sea salt
  • 1 cup flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp parsley
  • Pinch of red pepper flakes
  • Smoke ’n Magic Rib Rub
  • 1 cup yellow cornmeal
  • 2 eggs
  • ½ cup buttermilk
  • Oil for frying

For the Pimento Cheese Dip:

  • 1 block (8 oz) full-fat cream cheese
  • 1 cup shredded sharp cheddar (freshly shredded if possible)
  • 1 cup shredded jalapeño pepper jack cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp parsley
  • Pinch of cayenne pepper and red pepper flakes (optional)
  • 2 (4 oz) cans diced pimentos, drained and patted dry
  • 1 (12 oz) jar roasted red peppers, diced, drained, and patted dry
  • 1 cup mayo
  • Non-stick spray
  • Medium baking pan

Instructions

  1. Prepare the Tomatoes
    • Slice green tomatoes and sprinkle with ground sea salt
    • Let sit 10 minutes to draw out moisture and ensure your tomatoes don’t end up soggy
  1. Set Up 3 Dredge Stations
    • Station 1: mix together flour, salt, pepper, garlic powder, parsley, red pepper flakes, and Smoke ‘n Magic Rib Rub
    • Station 2: Yellow cornmeal
    • Station 3: Whisked eggs + 1/2 cup buttermilk
  1. Fry the Tomatoes
    • Dredge the tomato slices first through flour, then the egg mixture, then the cornmeal, making sure all sides are covered
    • Fry at 350°F until golden brown and crispy
  1. Smoked Pimento Cheese Dip
    • Drain and pat dry 2 (4oz) jars of pimentos
    • Drain, dice, and pat dry 1 (12oz) jar of roasted red peppers
    • In a large bowl, mix cream cheese, pepper jack, salt, pepper, garlic powder, parsley, cayenne/red pepper flakes, diced pimentos, roasted red peppers, and mayo
    • Spray a medium baking pan with non-stick cooking spray, then evenly spread out your cheese mixture
    • Transfer to a smoker or oven and smoke at 300°F for about 50-55 minutes, until bubbly and golden on top.
