This pork loin is POPPIN’ with flavor! Brad shows you step-by-step how to butterfly, roll, and stuff a pork loin with a creamy, smoky, and spicy filling. Cream cheese, jalapeños, bacon, green onions, garlic, and even crab meat come together inside, then it’s seasoned up with Smoke ’n Magic rubs and roasted to juicy perfection.
Ingredients
- 1 pork loin, trimmed to ~12″ and butterflied
- 2 blocks cream cheese, softened
- ½ cup green onions, chopped
- ¼–½ cup jalapeños, chopped (adjust to heat preference)
- 6 slices thick-cut bacon, cooked and chopped (~½ cup)
- 1–1½ tsp garlic powder (to taste)
- ½ cup imitation crab meat, finely chopped
- Smoke ’n Magic Pork Rub
- Smoke ’n Magic Rib Rub
- Olive oil or cooking spray
- Aluminum baking pan
- Butcher’s twine
Instructions
- Prep the Pork Loin
- Trim a pork loin to about 12″
- Butterfly open, lying flat
- Season the top with a medium coat of Smoke ’n Magic Pork Rub. Let it sweat in for about 10-20 minutes while you work on making the filling.
- Make the Filling
- In a large bowl, combine:
- 2 blocks of softened cream cheese
- ½ cup green onions, chopped
- ¼–½ cup jalapeños, chopped (adjust to heat preference)
- 6 slices thick-cut bacon, cooked and chopped (~½ cup)
- 1–1½ tsp garlic powder (to taste)
- ½ cup imitation crab meat, finely chopped
- In a large bowl, combine:
- Fill and Roll the Pork Loin
- Lay about 6 strings of butcher’s twine underneath the pork loin
- Spread the filling mixture evenly across the top of the pork loin
- Roll the pork loin into a log, then tightly tie with the butcher’s twine into equal sections. This will help maintain the log shape and hold in the filling while it cooks.
- Trim any excess twine
- Coat the outside with medium coats of Smoke ’n Magic Pork Rub and Smoke ’n Magic Rib Rub. (Pro tip: Pour the rub directly onto the cutting board, then roll the loin across it for an even coat.)
- Let sweat in for another 10-20 minutes
- Bake, Slice and Serve
- Preheat your oven or smoker to 300°F
- Place a baking rack in a medium sized baking pan, and spray with cooking oil.
- Place your pork loin onto the baking rack
- Cook for about 1hr to 1hr 15 minutes, until the internal temperature reaches 140°F
- Remove from the heat and rest, the carryover cooking will bring it to a perfectly tender 145°F!
- Slice and serve!
