This recipe combines two of the best foods into one dish: cheese and potatoes! 🧀 🥔 It’s the ultimate comfort-food side dish, with melty cheese, crispy golden topping, and smoky BBQ vibes. Great for backyard gatherings, weeknight dinners, or just because you need something gooey and delicious!

Ingredients

  • 1 stick of Salted Butter
  • ½ Cup White onion, chopped
  • 1 can Cream of Chicken Soup
  • 1 cup Sour Cream
  • 1 tsp Garlic Powder
  • ½ tsp Salt
  • 30 oz Shredded Hashbrowns (thawed)
  • 3 Cups Shredded Sharp Cheddar Cheese
  • ½-1 cup Panko Bread Crumbs
  • Green onions or chives, for garnish
  • Smoke ’n Magic Rib Rub
  • Non-stick spray
  • 9×13” baking dish

Instructions

  1. Sauté the Onions
    • In a skillet over medium heat, melt 1 stick of salted butter
    • Add ½ cup of chopped white onion and sauté until softened and translucent. Set aside
  1. Mix the Base
    • In a large mixing bowl, combine:
      • 1 whole can of Cream of Chicken Soup
      • 1 cup of Sour Cream
      • 1 tsp of Garlic Powder
      • ½ tsp Salt, mix well
    • Stir until smooth
    • Add the sautéd onions and melted butter to the bowl, and mix well.
  1. Add Potatoes & Cheese
    • Add 30oz of Shredded Hashbrowns, preferably thawed. If frozen, that’s OK, it’ll just need about 15 extra minutes of cook time.
    • Add 2 cups of Shredded Sharp Cheddar Cheese (or cheese of your choice)
    • Stir well, folding your wet mixture into your cheese and potatoes until everything is evenly coated.
  1. Cook your meatloaf
    • Preheat your smoker or oven to 350° F
    • Spray a 9×13” baking dish with non-stick spray (you’ll thank us later!)
    • Spread your potato mixture evenly into the dish
    • Top with:
      • 1 cup shredded cheddar cheese
      • 1/2-1 cup Panko bread crumbs
      • A generous dusting of our Smoke ’n Magic Rib Rub for some extra color and flavor
  2. Bake
    • Bake uncovered at 350° F for 45-55 minutes until hot and bubbly with a golden brown topping.
    • Let cool slightly, then garnish with green onions or chives before serving.
