This quick and easy recipe may be bite-sized, but it’s a BIG crowd pleaser!

Ingredients

  • 4oz softened cream cheese
  • 1.5 cups mild shredded cheese
  • 1.5 cups sweet corned (canned or frozen)
  • 2 green onions, finely chopped
  • 6 strips of bacon, finely diced
  • 2 fresh jalapeños, de-seeded and finely diced
    • Or you can use 1/4 cup jarred diced jalapeños
  • 1/2 tsp coarse Kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Dredge ingredients:
    • 2 large eggs
    • 3/4 cup flour
    • 1.5 cups panko bread crumbs

Instructions

  1. Prep the cheese & corn mixture
    • Preheat oil in a fryer or skillet to about 350-375°F
    • In a bowl, combine the cream cheese, shredded cheese, corn, green onions, bacon, jalapeños, and seasonings.
    • Mix well, using a spoon or your hands, making sure the cream cheese is well incorporated throughout.
      • Pro tip: We recommend NOT using a mixer, which will make everything too mushy!
  2. Roll and Dredge
    • Setup your dredge ingredients in three separate bowls. Whip the eggs in one, then put the flour and bread crumbs in their own bowls as well.
    • Scoop and roll your cheese and corn mixture into small balls
    • Place the balls aside in a medium pan lined with butcher or parchment paper
    • Once the balls are all made, dip each one into the dredge bowls, starting with the eggs, then flour, and finally the bread crumbs.
  3. Fry
    • Place them into the hot oil and fry until crispy and golden brown
    • Set aside on a baking rack to cool and allow any excess oil to drain off.

Let the cowboy bites cool slightly, serve, and enjoy! We dipped ours into a homemade spicy ranch dressing for a little extra flavor. The dip was made using a ranch seasoning mix, sour cream, and bit of juice from the jarred jalapeños. They’re also great as-is and are sure to please your family or friends at your next cookout or event!
