One of our favorite things about the BBQ community is that everyone brings something unique to the table. During our Fourth of July BBQ, we invited members of our BBQ Family to share one of their favorite cookout recipes.

Ryan and Kim Cain of Damn Fine Beef & Swine are known for putting a barbecue twist on trending recipes, and these Smash Tacos are no exception. Crispy tortillas, seasoned ground chicken or pork, and fresh salad toppings come together in just minutes, making these easy meals that are perfect for weeknight dinners or your next backyard cookout.

Ingredients

For Chicken Caesar Smash Tacos

  • Ground chicken
  • Smoke ’n Magic Rib Rub
  • Meat Rushmore All Purpose Seasoning
  • Man Meat Homestyle Seasoning
  • Green onions
  • Flour tortillas (medium taco size)
  • Caesar salad kit
  • Additional Caesar dressing (optional)
  • Parmesan cheese
  • Croutons

For Asian Pork Smash Tacos

  • Ground pork
  • Smoke ’n Magic Rib Rub
  • Meat Rushmore All Purpose Seasoning
  • Man Meat Homestyle Seasoning
  • Bachan’s Japanese BBQ sauce
  • Sesame Asian slaw salad mix
  • Additional sesame dressing (optional)
  • Carrots, thinly-sliced
  • Cucumber, thinly-sliced
  • Green onions
  • Peanuts or cashews
  • Sesame seeds or Everything bagel seasoning
  • Bachan’s Japanese Yuzu Citrus BBQ sauce

Instructions

  1. Preheat your grill to approximately 300°F
  2. In a bowl, combine the ground meat with Smoke ’n Magic Rib Rub, Meat Rushmore All Purpose Seasoning, and Man Meat Homestyle Seasoning with chopped green onions, until evenly mixed.
    • For the pork tacos, Ryan used a bit more of the Rib Rub and Meat Rushmore AP for some extra color
  3. Spread a thin, even layer of the seasoned meat onto one side of each flour tortilla, almost like spreading pizza sauce so it touches the edges.
    • For extra flavor, sprinkle with a little additional seasoning
  4. Place the tacos meat-side down on the grill and cook for about 5 minutes, or until the meat is cooked through.
  5. Flip and grill the tortilla side briefly until golden and crispy.
  6. Meanwhile, toss the salad kits together according to the package directions.
    • We like to do this directly into the bag for easy clean up!
  7. Top each taco with the salad mixture and toppings of your choice.
  8. Fold, serve immediately, and enjoy while hot!

🔥 Ryan’s Pro Tip: Spread the meat as thin as possible on the tortilla. Thin patties cook quickly, crisp up beautifully, and help keep the tortillas from getting soggy. You can even make them ahead of time and store them in the refrigerator until you’re ready to grill.
