This is NOT your Grandma’s meatloaf. 🔥🥓
Ingredients
- 1 pound hickory smoked bacon (we prefer Daly’s)
- 2 pounds ground pork sausage (not breakfast sausage, just regular!)
- 3 jalapeños, diced
- 1 medium yellow onion, diced
- 2 Tbsp minced garlic
- 1/4 cup Smoke ‘n Magic Pork Rub (about 1 cap-full)
- Simply Marvelous Spicy Apple seasoning (about 1/8 cup)
- Smoked gouda cheese (about 1-2 cups)
- 1 whole apple, peeled & sliced (Granny Smith or Honeycrisp)
Instructions
- Make the Bacon Weave
- Create a “bacon weave” by laying your bacon down vertically, about 6 strips wide
- Lay strips of bacon across horizontally, “weaving” it between each vertical piece
- Once complete, flatten slightly and place in the freezer for about 20 minutes to firm up and make for easier wrapping later
- Prep the Meatloaf
- In a mixing bowl, combine the pork sausage, jalapeños, yellow onion, minced garlic, and seasonings.
- Before combining fully, peel and grate an entire apple into the bowl for some added sweetness
- Finish combining, and form the mixture into a meatloaf log, either in the bowl or in a medium pan
- Place in the freezer to firm up for about 20 minutes
- While it’s in the freezer, pre-heat your oven, smoker or pellet grill to 300°F
- Wrap the Meatloaf
- Remove your bacon weave from the freezer, and place flat on a piece of butcher or parchment paper
- Remove the meatloaf from the freezer, and place on top of the bacon weave
- Using the paper to help, wrap the bacon weave around the meatloaf
- Note: The bacon may not cover the entire loaf, which is OK! You don’t want to over-bacon the meatloaf (as controversial as that may sound to some!)
- Over the top, add another dose of Smoke ‘n Magic Pork Rub and Simply Marvelous Spicy Apple seasoning for some added color and taste
- Cook the Meatloaf
- Spray a baking rack with non-stick spray and place the meatloaf on top
- Place in the pellet grill, oven or smoker and cook at 300° for about 90 minutes, until the internal temperature reaches about 160°F
- Create BBQ Sauce Glaze
- When your meatloaf reaches an internal temperature of about 120°F, remove from the smoker
- On top, pour a mixture of your favorite BBQ sauces. We used our Smoke ‘n Magic Spicy Sauce (voted “Best Sauce on the Planet” by the American Royal, and “Best Spicy Sauce on the Planet” for two years in a row!) and a dose of hot honey
- Finish the cook, removing the meatloaf when it reaches about 160°F
- Let cool slightly, slice, and enjoy!
