This is one of our favorite recipes. Crispy on the outside, buttery on the inside, and bursting with lemon flavor, this recipe is as simple as it gets with only 5 ingredients and 6 minutes to make! Whether you’re using a stovetop skillet or your outdoor griddle, you’ll get restaurant-quality results at home with just a few ingredients.

Ingredients

  • Fresh or frozen scallops
  • Coarse ground kosher salt
  • Coarse ground black pepper (we used 16-mesh)
  • Olive oil
  • Lemon juice

Instructions

  1. Prep the Scallops
    • Place scallops on a paper towel and pat dry on both sides
      • We used frozen scallops in our recipe since we’re landlocked here in the Midwest, but if you can find fresh, use fresh!
    • Season with salt and pepper on both sides
  1. Prep Your Cooking Surface
    • Heat your griddle or cast iron pan to about 600°F. We used the Hooray Hurtado Smokebox with the griddle attachment.
    • Once hot, spread olive oil over the top so your scallops don’t stick
  1. Cook the Scallops
    • Place the scallops and cook for 3 minutes
    • Flip, drizzle with lemon juice, and cook another 3 minutes
  2. Serve and Enjoy!
