When it comes to BBQ competitions, ribs are all about precision: perfect bite, clean pull, and just the right texture. But when we are cooking at home? It’s a different story.
This recipe uses the classic 3-2-1 method, cooking low and slow for fall-off-the-bone ribs that are packed with flavor and perfect for backyard BBQs, family gatherings, and game day. It might not win competitions, but it’s our favorite way to eat ribs!
Ingredients
For the Ribs:
- 1-2 racks pork ribs
- Smoke ‘n Magic Pork Rub
- Smoke ‘n Magic Rib Rub
- Smoke ‘n Magic Spicy BBQ Sauce
For the Wrap:
- ½ cup brown sugar (per rack of ribs)
- Honey (for drizzling)
- Squeeze Butter (or melted butter)
- Aluminum foil
Instructions
- Trim & Prep the Ribs
- Trim excess fat from the ribs to create a clean, even rack. If needed, remove the first 1-2 bones if they have little to no meat on them.
- Season both sides generously with our Smoke ‘n Magic Pork Rub and Rib Rub.
- Pat the rubs in (never rub a rub!) and let the ribs sit for 10-20 minutes to allow the rubs to sweat in.
- Smoke for 3 hours
- Preheat your smoker to 225-230°F
- Place the ribs directly on the smoker and cook for 3 hours
- For added moisture, place a pan of water underneath the ribs
- Wrap & Cook for 2 hours
- Lay out two sheets of aluminum foil (for extra protection and to hold in juices)
- Add ¼ cup brown sugar, drizzles of honey and squeeze butter (we heated our butter up slightly by placing the bottle on top of the smoker, to make for easier pouring)
- Place the ribs bone-side down on the mixture. Repeat the brown sugar, honey and butter on the top of the ribs.
- Wrap tightly and return to the smoker. Cook for 2 hours.
- Finish Unwrapped for 1 hour
- Remove the ribs from the smoker and carefully open the foil
- Do not remove the ribs! Instead, roll the edges of the foil down to create a “boat,” keeping the ribs sitting in their delicious juices.
- Return to the smoker and cook for 1 more hour
- At about the 45 minute mark, brush some Smoke ‘n Magic Spicy BBQ Sauce over the top. For extra flavor or to thin the sauce, you can even baste some of the juices from the foil onto the ribs as well.
- Cook for the remaining 15 minutes to let the sauce set in.
Remove the ribs from the smoker and let rest briefly.
Pro tip: Don’t forget to spoon the juices from the bottom of the foil over the top of the finished ribs. That’s where all the flavor is!
Slice between the bones, serve and enjoy!
