  1. Rub Pork Belly on both sides with Smoke ‘n Magic Pork Rub liberally
  2. Cook at 275 for 3 hours either on a rack on directly on the grate
  3. Wrap pork belly in foil with Sugar in the Raw, canned pineapple chunks, fresh jalapenos, and Smoke ‘n Magic Spicy BBQ Sauce-place back on the smoker until internal temperature of 212.
  4. Cube-up pork belly
  5. Prepare tacos: 2 white corn tortillas-add pork belly, pico, cojata cheese, some jalapeno, and pineapple from the wrap
