INGREDIENTS
- Smoke ‘n Magic Pork Rub
- 1/2 cup Smoke ‘n Magic Spicy BBQ Sauce
- 1/4 cup sugar in the raw
- 1 can pineapple chunks, drained
- 3-4 fresh jalapenos, sliced (as desired, they will not add a ton of spice once cooked)
- Pico de gallo as desired
- Cotijo cheese as desired
- White corn tortillas
RECIPE
- Rub Pork Belly on both sides with Smoke ‘n Magic Pork Rub liberally
- Cook at 275 for 3 hours either on a rack on directly on the grate
- Wrap pork belly in foil with Sugar in the Raw, canned pineapple chunks, fresh jalapenos, and Smoke ‘n Magic Spicy BBQ Sauce-place back on the smoker until internal temperature of 212.
- Cube-up pork belly
- Prepare tacos: 2 white corn tortillas-add pork belly, pico, cojata cheese, some jalapeno, and pineapple from the wrap
